Thanks to everyone that came out yesterday. We will have free coffee and biscuits every Sunday starting at 12noon. Ian Lockey and Tim Nolan will be serving up Bloody Mary's and Mimosas as well as all of your other favorite drinks.

Our second Annual Pig and Goat Roast is happening on the 6th of October from 6pm - until. Come out and celebrate the changing of seasons with us and enjoy locally raised pastured whole pig and goat, corn pudding, potato salad, handmade sauces, and more. We will have drink specials and plenty of Foggy Ridge Hard Cider.

Quinine and Cherries

Ian Lockey came over and helped me make quinine syrup (tonic water) and maraschino cherries today. We use the quinine syrup to make a classic gin and tonic. The flavor is more complex and robust than commercial tonic water. The spices are very forward but very nicely balanced by the citrus and sugar. We use a lot of maraschino cherries at the bar and I've been wanting to make them myself. I'm hoping this batch will turn out as expected.

We packaged 16lbs of fresh cherries with our homemade "maraschino cherry juice." The cherries will be ready in about a week. Come by and have a Manhattan and tell us what you think.

ROOT is very aromatic in the glass, with a delightfully rich bouquet of birch, smoke, baking spices, and vanilla. While incredibly unique in flavor, it is clean on the palate with strong notes of birch, peppery herbaceousness, spices, citrus and vanilla bean. ROOT finishes medium dry and exceptionally full-bodied, with aromatic properties of spices lingering long after the last precious sips.

BUFFALO TRACE EXPERIMENTAL COLLECTION

In 1987 Buffalo Trace Distillery began experimenting. Since then Buffalo Trace has produced over 1,500 experimental barrels of whiskey now aging in its warehouses. Each of the barrels has unique characteristics making each one different from all others. Some examples of these experiments include unique mash bills, types of wood, barrel toasts, and more.

Buffalo Trace periodically bottles a few of these experimental barrels and makes them available to consumers. Each experiment that is released is very limited and rare.

Pappy Van Winkle's Family Reserve 23 Year Old Bourbon is a fascinating dram. Extensive barrel aging has given this whiskey a complexity and diversity of character that isn't often experienced in bourbon: a bouquet of baking spice, bacon, tobacco, honey, leather, dark chocolate, almond, toffee, oak, and vanilla leads into unctuous, bold flavors of caramel, coffee, vanilla, dried fruit, and cocoa. Wine Enthusiast described it as "an American distilling masterpiece."

I recommend drinking this one straight up with a splash of water to open it up. Try one and fall in love!

The Single Brothers' House was built to house the Single Brethren, the unmarried men, of the Moravian Congregation of Salem, now Winston-Salem, North Carolina. The first portion designed by Friedrich Wilhelm von Marschall, secular leader of the Moravian colony, was constructed of traditional Germanic half-timber framing, exposed brick noggin, a clay tile roof, and had a pent eave. It was completed in 1769. A later brick addition, was added in 1786, by master mason Johann Gottlob Krause to the south end. The building housed craftsmen and their apprentices, as well as provide individual trades shops. The building had kitchen and dining room, administrative offices, and a Saal (worship/meeting area). Additional buildings were constructed on the large property that provided additional space for the activities such as the (reconstructed) 1771 Workshop building behind. There were also a brewery, slaughterhouse, distillery, and tannery on the parcel, as well as extensive gardens that have been partially restored. The Single Brothers House was closed in 1823, with the oldest part used as apartments and the brick addition as a Boys School. The school only stayed in the building for 6 years, after which the building was primarily residential and eventually became known as the "Widow's House" since there were mainly single women and widows of the congregation living in it. The Single Sisters later took control of the property and eventually it was leased as part of the museum and restored in 1964.

I just returned from a short trip to Brooklyn. The weather was great and most of my friends had plenty of time off work to hang out. It was a good time all around! Below is a list of some of the food and drink highlights:

* Great carnitas sopes with a really spicy tomatillo salsa. Laura, Justin, and Jody got the Pepino margarita which has chile infused tequila in it. Spicy, sweet, and perfectly balanced. I ended up getting Don Julio Reposado with their house Sangrita mix. The Sangrita was wonderful. They use the juice from their pico de gallo, orange juice, and chiles to make their mix. Sangrita is traditionally a chaser for tequila. I like sipping on it, especially with Don Julio. Make sure if you're in NY to stop by and say hey to our friends Rachel and Neilie.

I ended up going to Walter Foods twice, once for drinks and the second time for dinner. I love this place. The level of quality is exceptional but the service and excitement about the menu is what really got me. On Saturday night my posse and I spent a couple of hours sitting at the bar tasting handcrafted drinks and chatting with the bartenders. We geeked out on bitters, maraschino cherries, different types of vermouth, Black Maple Hill bourbon, margaritas, blah blah blah. You have to go for the fig sidecar/apricot sidecar (if they run out of fig sauce they sub it with apricot). Their variation on the sidecar is worth the trip. Rum, homemade lemondade, and fig/apricot sauce, in a sugared cocktail glass! The manhattan is worth trying if for nothing other than the cherries. They use Michters maraschino cherries, which are probably one of the best things I've ever eaten! Period! Check out their cocktail menu online.

If you do happen to make it to Walter Foods get the burger. They use short rib meat on a brioche roll and man is it good! Seriously!!
